  • Once melted, you will see bubbles forming. This is water content evaporating. Allow the butter to simmer for 20 to 30 minutes on low heat.

  • As it cooks, a white foam will appear on top. You can skim it off gently or just let it settle.

  • Next, you will notice milk solids settling at the bottom, turning light brown. The liquid will turn golden and clear. This is pure ghee. Let it cool down and then strain through a clean cloth into a glass jar. Your Ayurvedic ghee is ready.

 You must always cook on low heat and use unsalted, good-quality butter. Keep moisture away, as a wet spoon reduces shelf life. Store  Ayurvedic cooking fats in an airtight container, not plastic. Do not refrigerate, as Ghee stays fresh at room temperature.
